Energy Bites

Course Snack
Prep Time 45 minutes


  • 1 cup rolled or old-fashioned oats
  • 1/2 cup nut butter I used almond
  • 1/2 cup ground flax seed
  • 1/3 cup unsweetened coconut chips or flakes optional: slightly toasted
  • 1/3 cup raw honey or maple syrup
  • 1/4 cup raw cacao nibs or mini chocolate chips
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract


  1. Mix all ingredients in a medium sized mixing bowl with a spoon.

  2. Cover with plastic wrap and refrigerate for at least 30 minutes.

  3. Roll into balls. Greasing your hands with a little bit of oil makes this process easier and less messy.

  4. Store the balls in an airtight container in the refrigerator.
